Having studied at Eastern Institute of Technology,
Nick graduated and took employment for six
years with international hotels in both Sydney
and Melbourne.
He returned to NZ in 2002 to join The Edge Event
Centre in Auckland, followed by the Grant Chateau
at Mount Ruapehu.
Returning home to Hawke’s Bay with his family
he accepted a position with our company and
has advanced to his current position as General
Manager.

Arnault Vallée / Orton Catering

Arnault trained in France in a 2 Star Michelin
Family Restaurant learning the art of cooking.
He then moved to London to work for the
famous Roux Brothers, before advancing to
work with a big brigade at the Ritz.
He also helped build the reputation of what is
now London’s leading party design company –
The Admirable Crichton.
He immigrated to New Zealand in 2000 where
he took the position of head chef at Austin’s in
Auckland, a position that he held for almost 5
years before moving to Hawke’s Bay and joining
our company.

Terry has been Head Chef at Black Barn Bistro
since it’s opening in 2003. He and his team have
established an international reputation as a ‘must
visit’ for locals and visitors to Hawke’s Bay.
His outstanding skills are drawn from a wealth
of experience working overseas in various
countries and at leading winery restaurants in
New Zealand.The diversity and abundance of
locally grown produce means Terry can showcase
the very best of Hawke's Bay products.
